How can I create a DEMO of my program where you can limit the number of records entered into a table or set. I could then send out DEMO CD's as trial versions and then send the customer the unlimited full version if they purchase it.

Here's one way that I used (I'm sure there are others):

When the user starts my trial program, I have a script as part of the OnInit for the data-entry form that counts the records using TABLECOUNT(). If the count exceeds a certain amount, all the forms are rendered read-only by the script.

You could try some of these: hardcode a dummy company name and address on all forms and reports; have a dummy report that displays whenever a print routine is called; have a dialog box display whenever a print routine is called; disable all save routines; hardcode a specific date on all data entry along with a dialog explaining what will happen in the purchased version; if you incorporate a utility menu for houskeeping tasks, disable access with an explanatory dialog.
